Baker Makes Huge Rainbow Cake to Say Thank You to NHS Staff

A host of postponed orders due to the coronavirus lockdown left a baker in Peterborough with plenty of ingredients that needed to be used, so she decided to create a giant rainbow cake for NHS staff at her local hospital. Carol Smith said: “With my cake business closed and the next two months’ wedding cake orders postponed, I had ingredients that needed to be used. So I decided to make a cake for the wonderful NHS staff at Peterborough City Hospital who are doing an amazing job at what is a difficult time for everyone.” Smith said she used over 55 kilograms of ingredients, including 90 eggs, and took 40 hours to complete the cake.
